I made stuffed shells with macadamia-almond ricotta and fresh spinach, topped with the laziest marinara in the universe. Still tasty, though.

My mum gave me half a pumpkin the other day...gonna roast it and then make it into a creamy pasta sauce using oat milk :) Nice autumnal meal!

My sister and I are making tvp tacos with butternut nacho sauce (AVC), black beans with red wine & garlic, fresh corn tortillas, lettuce, avocado and pickled jalapeno.

Pureed chickpea, sundried tomato and rosemary soup with shell pasta stirred in (Supermarket Vegan) and a side salad with heirloom tomatoes, spring mix, cucumber, and balsamic vinaigrette. Oh, and baguette.
Pretty good. The soup was a little strange, since the recipe called for blending the soup until smooth and then adding the pasta in it. The Mr. said it reminded him of turkey gravy (which wasn't a bad thing to him) and it looked like butternut squash soup... with pasta in it. Next time I might leave it a little chunky.

About once a month I crave the vegan Chinese place in town, and that craving NEEDS to be fulfilled. There were a few of us, so we had sweet and sour gluten, veggies and yuba with pepper sauce, turnip cakes, salt and pepper tofu, and hot and sour soup.

My sister, her boyfriend and I went to Pukk, a vegetarian Thai restaurant. I ordered the pricey special I had eyed last week.....it was tasty but my meal last week was better! (and 4 dollars cheaper)

I was going to make it pizza night, but feeling stressed from work stuff I have to finish and I haven't made the dough yet. Normally if I have some dough on hand thawing, pizza night is a no-biggie, but tonight it feels like it.
So I'm switching up the meal plan and we're going to have pasta with an artichoke/lemon/tomato/creamy sauce thing I make.
Later this week I'm also planning on making that mushroom sauerkraut soup from Terry's book that Isa posted. I have a leek on its last leg in the fridge, so I'm going for it. So excited.
