 Post subject: Roasted Peppers w/ Sicilian Tempeh Stuffing

I wanted to serve stuffed peppers as a main course, so I decided to fill them with a savory tempeh stuffing with miso, capers, red pepper flakes, rosemary, and fennel pollen. They were awesome, and I would totally be eating the leftovers for lunch today if my cat hadn't stolen them off the counter as they were cooling. I'd be pissed, but I can't really blame him as these were AWESOME. :)

Quark, I used insanely adorable "mini" sweet peppers I found at Trader Joe's, but regular-sized sweet peppers would work as well.

Those look great! I posted onto my vegan board on pinterest for future use :)

What would you reccomend as a sub for the fennel pollen? I have never seen it, and I will probably not go to the effort to buy online.

I really do suggest trying it, but I get that it's a bit of a pain to get a hold of. :) I'd try subbing a smaller amount (maybe half?) of fennel seed since the seed's flavor is much more assertively "licorice" than the pollen. You could also sub chopped fennel bulb in place of the onion and give that a go.
