so i'm going to hang out with someone who is a celiac tonight and i want to bring some baked goods. he says he does not have to have certified gf stuff and he eats bread out of the same toaster as his non-gf wife.

i have never baked specifically gf stuff, and don't really have a lot of gf flours. (i think i have rice flour, tapioca and potato..and i have oatmeal.)

any ideas what i can make?

I have not tried this recipe, but I have made the not non-GF choc chip cookie recipe from vegan diner and it is fantastic. Julie posted a GF version on her blog.

or how about an apple crumb topped pie or apple cobbler? i really don't know a lot about GF but are oats GF? maybe you could make a sweet, crumbly topping using oats, butter, sugar, spices??

i dont have things like sorghum flour or xanthan gum.

I bet you can swap rice flour for the 1/4 cup of sorghum they ask for.

i realized my rice flour that i had was actually sweet rice flour, so i made coconut mochi

happy herbivore's black bean brownies were another option

as well as some kind of coconut oat chocolate bars.
