I went to Disneyland last week and was pleasantly surprised with the quality of the counter service food. There are lots of vegan options, and everything was fresh and tasty.

Roasted vegetable and whole grain salad with basil vinaigrette from Jolly Holly Bakery on Main Street at Disneyland. This was so good I ate it 3 times.

What was the recipe for the white wine cupcakes, and especially the white wine frosting? I can easily see replacing some or all of the liquid in a cake recipe with wine, but how to get it into frosting? (I am one of those people who like booze!)
Can I come and work at your office so I can have those lovely scones and muffins?

I just used a vanilla wacky cake recipe (I don't even know where I got it, but they're all more or less the same) and replaced all the liquid with wine. And the liquid in the frosting was wine, too. There wasn't much in there (maybe 1/4 cup?), but the flavor came through pretty well.

I modified this recipe for the scones. It's a GREAT recipe! The texture/flavor reminds me of shortbread, which is a good thing in my opinion because shortbread is basically my favorite thing. I replaced the raisins with dried figs and added an equal amount of cinnamon chips.

are you sure you are not me??

ps...what kind of wine did you use in the cupcakes? dry like a chardonnay, or sweet like a riseling? Also, you think that would work with red wine? I really really must try this.
