Most of my family is now either vegan,vegetarian or needs to be eating healthy. So, I'm now in charge of just about all the food prep. They are pretty cool with my cooking, but if anyone has suggestions on vegan desserts for diabetics and/ or anything that will really wow the omni grandparents I will love you forever.

I don't know much about cooking for diabetics, but I made the pear frangipane tart from VPITS recently and it was awesome. It doesn't seem to have too much sugar in it, but I don't know if my idea of "not much sugar" is low enough for what you need.

For people with diabetes, i'd probably just go with small portions of regular desserts and in general, try not to have a lot of refined carbohydrates at the meal. it's not only dessert that's an issue for them.

Pear tarts sound delightful! My uncle is pretty good about controlling himself, I just feel bad when ever it's dessert time because I'm never sure of what to make him.

check out the Chocolate Covered Katie blog. Her desserts are all healthy--and most of them can be made sugar free. They are all vegan too. I love her stuff--everything I have tried is great!

so exciting to be in charge of thanksgiving! congrats!
I'm in charge of the veggie entree and the desserts every year.
We have lots of other vegans now, but nowadays all the other vegans are eating Eat To Live (no salt, no sugar, no oils)... which doesn't really make for a super fun vegan entree. I'm not sure what I'll do.
