I needed only about half the box for a sauce recipe last night and now I have the left in my fridge. What should I do with it? I am making chili tonight, can I turn it into vegan sour cream?

I think some of the brownies/blondies in VCIYCJ call for half a box. Or maybe a quarter box. All I know is that when I make them I always make enough batches to use the whole box, and it's more than one batch.

I've never made sour cream, but there are lots of sour cream recipes online that ask for silken tofu, so you could make one of those.
Or you could make pie! Some of the recipes in VPITS ask for half a box: the maple pecan pie or the Boston cream cake pie, for example. There might be more, I don't know. Or you could always halve one of the other pie recipes that ask for a full box.

you can slice it thin, and fry it like an egg with black salt and nutritional yeast sprinkled on top. Someone suggested this to me and now I'm hooked.

If you have cornmeal or cornbread mix, I would just find an omni cornbread recipe, use the tofu to replace the eggs, and have it with the chili.

Hmmmm, I might try the egg suggestion. Can you do it scrambled? I kinda scooped it out of the box and so slicing is out of the question. I have an awesome cornbread recipe already that I veganized, but I am having chili tonight.

it is hard to slice but it taste like the white part of a friend egg. I usually have a few slices and several pieces that didn't stay together.

I've made sour cream with it before and it worked out well. I mean, I don't really like sour cream, but the people who ate it liked it.
