I thought I'd start a bread/bread maker thread.
What is your favorite sandwich bread recipe? What is your favorite "treat" bread recipe? (Like cinnamon raisin, etc)

I have never successfully made any type of gluten-free bread. I'd love to hear about it if you have. I buy a millet sandwich bread from a local bakery, and I've made muffins that were pretty good. The loaf has eluded me.

I made the Bob's Red Mill mix once and it was okay. It didn't really have instructions for egg replacer so it came out kind of eggy tasting, oddly enough. Bob's Red Mill website does have a recipe for sandwich bread that does tell you an egg-free option and I'm also going to try Gluten-Free Goddess' bread. I don't even really care if the bread rises, honestly. I just want some decent sammich bread.

I like the Kinickinick Sunflower Flax bread.
I made the Bob's Red Mill bread mix once and at first I thought I loved it and ate a couple big slices, warm with Earth Balance. Then I realized it had an overpowering strange flavor issue and I couldn't eat another bite of it and I ended up throwing it out :( It was a while ago so I can't recall what exactly the issue was ... it just tasted off.
Since it's almost Thanksgiving... I have used that shelf-stable Ener-G rice bread to make stuffing and it came out really well, though I've never tried to eat it as is.

Recently I've been buying the food for life brown rice bread, i like it fine toasted, and it's the cheapest option at the grocery store. In the past, though, I've had really, really good luck subbing blended up silken tofu for the eggs in the bob's bread mix (both their "homemade wonderful" basic mix and whatever their more multigrain one is) and otherwise following the directions. I think I did a quarter cup per egg, blended with an immersion blender for maybe a minute.

Hmm, I don't think so, but maybe it does. I just did a cursory scan of the ingredients list, and assumed it was vegan because there were no milk or eggs in it. Next time I'm at the store, I'll find out for sure!
