Simple dinner tonight: lemony broccoli, sweet potato black bean hash and a gardein cutlet. It was easy but very satisfying.

veggie korma with a coconut based sauce and various veg & chickpeas over basmati. could have been much more delicious if it simmered for longer but husband was starving.

Mac and cheeze (half a packet of leftover alfredo chreese, nooch, garlicky miso, and brown mustard) with broccoli and peas, and more cabbage.

Holy crepe guys. The butternut Alfredo in the PPK blog is one of the most amazing meals ever. I used a lovely Gewurtztraminer.

So. effing. good.

it really is! it's ridiculously good. One of my favorite meals in a long time.

And I'm not even a squash fan. I don't not like it, but I don't go out of my way to eat it, especially given how expensive it is.

YRR Kasha varnishkes because I was too lazy to make what I had originally planned for tonight. Oh, and steamed broccoli.

Yes it is! I had that for dinner too. I actually made a double batch and froze some, so I'll be eating it for a couple weeks.

I've made it with wine before, but this time I just used vegetable broth, and it was still really good.

You guys are making me want to make that butternut alfredo. I think it might be on tomorrow's menu.

YRR black eyed pea soup and homemade rolls, hopefully. If not, we'll have the banana bread I made yesterday with it. Might be an odd pairing, but I'll never turn down delicious banana bread.

It's time for winter food! Seitan pot roast, stew and dumplings.

Going out to dinner in my town, so: salad, pasta with marinara, booze.

General tso's tofu, veggie fried rice, scallion pancakes, veggie dumplings.

muesli with soy milk... yay...

trying to decide between:

leftover beetballs from the freezer, with tomato sauce and mushrooms over shirataki noodles;

OR

boxed Mac n Chreese with hotdogs

pasta with 'meat' sauce & garlic bread!

A big green juice because I have a TON of produce to use up. And then maybe a Tofurky hotdog because I impulse bought them and why not.

I was super on the ball and made dinner for tonight yesterday since I knew we wouldn't be getting home until lateish. We will be having mushroom barley soup and I'll probably grab a loaf of bread to do garlic bread on the side. Noms.

I've been ripening a nice big butternut squash from a friend's garden. I think about half of it is going to go to trying out this recipe. I'm so confused though. Lavawitch, you think BN squash is expensive? How much are you paying for it? I can get it for under a dollar a pound, the same price as other winter squash.


Tonight I made fried rice with lots of veggies and super firm tofu cubes and topped it with my dad's home made kimchi.

Leftovers: cabbage, part of a grinder, fried tofu, and some noochy pasta.

Chickpea cutlets, gravy, rather overcooked baby potatoes, and a salad.

Tofu scramble! PPK blog recipe, which I make so often I've memorized it.

Pizza with nooch, peppers, onion, and the last of the General Tso's tofu. So good!

Oooh! I was craving something really filling and warming for dinner, so I made chipotle twice-baked potatoes. I baked a couple of russets, browned some grated smoked tempeh and a couple of minced chipotles in adobe in a healthy dose of Earth Balance, then added some dark cider and tamari and let that cook off. I mixed the innards of the potatoes with the tempeh, a bunch of scallions, and some mature cheddar cheezly. Baked them again with a slight brush of Earth Balance, pepper, and cayenne. Delicious! We planned to have some healthier veggies along with it but these were just too moreish and filling.

Noochy caulipots, chickpea gravy, broccoli, and Linda McCartney sausages.
