I think they'd stay relatively fresh in the fridge. I made a birthday cake for my mum on Sunday. We just ate the last of it today, four days later, and it was still almost as good as when it was freshly baked.

If you don't have freezer access during your long weekend, you can simply store them in an airtight container right after they've baked and cooled down.
