i have an obsession with black eyed peas and collards.
the AFR recipe is good, but there's a recipe in greens glorious greens for southern style black eyed peas, collard greens and roasted red peppers that is my absolute favorite. you can find it on amazon search inside if you don't have the book. i've made it every week for 4 weeks now since giant bunches of collards are $2 at the farmer's market! i do add a lot more collards than it calls for though..and sometimes i just do a can of tomatoes instead of red peppers.
texas caviar is always good too!
another easy thing i like to do is cook a bag of beps and keep them in the fridge. to a skillet add some of the beps, some frozen bagged collards, let that cook until it sweats a bit and mix in some mashed potato flakes, a little water and gourmet red peppers in oil..hot sauce optional. i ate that for pretty much a month straight once. it was supercheap too!

Update on the YRR black eyed pea soup. It's so good! I think the dill does something magical to make the black eyed peas taste really good. My partner even asked for seconds and he almost never does that!

Yeah, thanks for all the recipe links, folks. I love black eye peas anyhoo but I can't wait to try all these recipes you guys posted! <3

My strategy for getting acquainted with new beans is to make something I already know how to make that uses some other kind of bean, and substitute the new kind. Then I get a sense of how the new bean is different from the bean I already know, and what might work better. So like, if you already know how to make something that uses black beans or chickpeas or kidney beans, try substituting black eyed peas and see how it turns out. Since you basically already know how to make the recipe, you can't possibly screw it up too badly, and you'll eventually figure out what else you might want to do with your new bean.

I have had that recipe, but if it was listed as a variation and not in the original recipe, then I'll have to remember to add it next time I make it!
