so I must have been possessed by an otherwordly force when I bought the EB coconut peanut spread. Holy shitballs that stuff is mind blowingly amazing. It's my new favorite thing ever. I think about it when I am at work, I ponder new ways of incorporating it into my life and find myself salivating as I approach the jar.
Oh coconut, I guess we are now friends

Well, my dad makes this: rice (usually white) boiled with some water, some coconut milk, and scallion (this is more a feel thing than a recipe) with gunga peas. It's not coconutty at all- instead it's rich and really tasty. Goes with any meal!
Also, a little coconut milk mixed in curry is great.

I'm the opposite way. . . normally I love coconut, but I don't like the EB coconut peanut spread. Weirdsauce.

Love coconut but seriously allergic to it so I have to eat a benadryl with my first bite or I am trouble. Anyways, made the Banana Oat Date cookies from Colour me Vegan and they have an awesome blend of coconut and peanut butter in them. They didn't taste like coconut at all but the combined flavours were absolutely perfect. Too good for my lack of willpower cookie gorging self.
