Bwahaha, oh Chef Ramsay. Had beef wellington on a cruise once and it made me gag. I'd love to revisit it at home and as a vegan some day. Yours certainly looks appealing!

That looks great!! I saw a beef wellington on Masterchef that also had a wrapping of crepes (after the duxelles, before the pastry), so that's what I'm going to try for my Christmas seitan roast, with a chestnut stuff in the middle too.

I'm having four* and it's still not enough! *one is a catered lunch at work so I'm making my own food to eat, one is the obligatory family thanksgiving where it's too annoying to bring everything i want, one is the big everything-i-want-to-make hoopla, and the last is a potluck with veg friends who resent being forced to spend the holiday with vegphobic family.
