Maybe leek and potato soup.
For now, I made couscous edamame wraps with red onion, carrot, spring mix, and Annie's Goddess dressing. It's pretty yummy, but I'm getting a little tired of couscous wraps since they've been my "thing" for 6 months now. Time to find a new easy food item to overdo.
ETa: this is weird, but maybe a sign I'm really a vegan now? I used to think Annie's Goddess dressing was gross, even though I liked other tahini things. My mom bought a bottle for my by mistake last year, and it was nearing its expiry, so I tried it a couple months ago, and now I'm on my third giant size bottle. What gives?

I wanted to try the gardein roast so tonight is garden roast with roasted potatoes, onions and carrots. Also roasted Brussels sprouts and roasted squash. I was thinking about making cranberry sauce but decided this is enough for dinner.

I'm making two huge batches of different soups. One for a soup swap, and one to use up our fridge full of produce. For the soup swap, I'm thinking carrot squash apple ginger, with a hint of curry, pureed. For us, um. Well that massive bag of mixed Asian greens, that huge hairy celeriac, bell peppers, Japanese eggplant, and bok choy and (groan) celery have yet to inspire me. I suppose I can muster a hot and sour soup of sorts.

Decided instead of baking cookies, I'm having chocolate chip waffles topped with bananas for supper! And if I'm feeling really crazy, I might melt a little chocolate peanut butter to drizzle on top.

Okay, I lied. Supper wound up being chocolate chip pancakes with banana, gimme lean sausage, and homefries. My brother shocked me by eating it- he claimed to hate pancakes, potatoes, and faux meats, and here he is stuffing a plateful of it in his face! Then he shocked me more by saying he liked the gimme lean because it was all the flavor "without the guilt".
Winning over the family, one plate of noms at a time.
