I know there are tons of recipes out there, but I am sure there are many like me that use the skeleton of the basic Italian recipe (or like), and fill in with whatever catches the fancy that day.

Anybody got any cool/kinda different ingredient/method ideas that have worked for them that they want to share?

My stupid sausage trick: Yesterday, I found that using heavily caramelized onions, pureed up and used as the 1 cup of "stock" gave the sausages a real flavour depth that I haven't been able to achieve before. Kinda one of those, 'I am making French Onion soup so why don't I do this' moments that worked out really well.

Looking forward to trying some of your ideas.

Have you seen this thread? I've used the spice mixtures in that thread to make different kinds but I've never used any ideas from my own brain. Caramelized onions in sausage are a great idea!
