Up there with vegan meringue (http://tribes.tribe.net/thesecretlifeof ... 03e97cc35f), surely this is one of the sacred cups of vegan baking.

Does anyone have a tried and tested vegan choux pastry recipe?

I have found one on line: http://veganbits.com/vegan-eclairs-augu ... challenge/ but I hear that vegan choux pastry can turn out tough and bready.

Calling on the PPK assembled wisdom for the most 'omni-fooling' vegan choux pastry recipe?

I haven't made any yet, but am dying to find a good recipe.

I recently had a vegan eclair from Cakewalk Baking Company in Utah. CLICK HERE to see the photo. It was SO AMAZING! Wasn't quite like a traditional eclair, but it was great. Kind of layered & flakey on the inside instead of just hallow & crisp. (And quite different looking than the link/recipe you posted.)

Please, some brilliant & generous vegan baker, figure this one out & share with the vegan world!

i tried my hand at a recipe i found online, it may have been the same one
mine came out oily and deflated
it was such a failure i never tried it again ):

I used to love eclairs but never considered making them myself. I ran across this recipe but I don't have enough vegan baking experience to judge if it looks reasonable.
