Well its that time of year again (at least in the us), and if you read in the foyer about my little (gross) problem -thank you.
I don't have a blog but I wanted to share this recipe. This is the best freshest cranberry relish you will ever make. It takes some effort and has been made for generations...this is my take on it. You need a meat grinder, but I'm sure it would be just as tasty in the food processor, just pulse until fine and not liquid.
2 bags fresh cranberries washed and sorted for bad ones 2 apples (1 if they are huge, peel if you want or get a yellow or green one and leave the skin on) 2 oranges (again 1 if its huge) zested and supremed (this is my version, the original had you put the whole thing in the grinder feel free to try it that way) 1 can crushed OR tidbit pineapple in juice (I think its 20 oz) Drained! 2 cups sugar (I reduce this by about half and add stevia to taste) dash salt thumb size piece of fresh ginger peeled
Add the cranberries and ginger to your meat grinder or food processor. If you use the food processor chop the ginger up really good you don't want a big hunk of it in the dish. Chop the oranges and apple small (about the size of the tidbit pineapple) add in the pineapple, orange zest, sugar and salt. Leave it to sit on the counter or in fridge until the sugar is dissolved. You can make this a couple days ahead but at least overnight for the flavors to meld and the sugar to dissolve. This makes a large bowl full!
Just about all of the measurements are variable, this recipe wasn't even written down, feel free to taste as you go especially for sugar. I added the ginger, salt and I changed the way the orange was done. I hope you enjoy it!

I thought there was going to be a video showing grandma using a power drill to make cranberry sauce.
