Does anyone use coconut flour? I have some and have found it quite difficult to use..it soaks up all the liquid even when there is only a little of it added to recipes and if used alone, its so dense that its gross. I hate to toss it, but I do not know what to do with it. My latest FAIL was pancakes that had CF in them. yuck.

I tried adding coconut flour to my pancakes one day. It was an epic fail. I really need to use that bag of flour up though. Oven is broken so I can't use it in baking.

My sister is GF and uses coconut flour. She's NOT vegan, and she reports using a ridiculous number of eggs with it (six? eight? maybe even ten?) because it sucks up moisture. So if you want to use coconut flour, my guess is that you need to exponentially increase your liquid. Maybe lots of apple sauce and/or banana, as well as lots of nice thick oil and soy milk?

what about finding specific coconut flour recipes that have the ratios already worked out? that way you won't have to waste an expensive ingredient as a substitute in other recipes.

I think you only want to use a little bit of it in a recipe, and mostly still use regular flour. I think it would probably work in some cookie recipes.

What if you made a batter out of it for, say, apple fritters or some other fried fruit? Because that could be stunningly delicious.

I've added small amounts (1/4 cup-ish) to both the Bakery Style Muffins in Vegan Brunch and the chocolate chip cookies from VCIYCJ with amazing results! It gives just a little coconut flavor, a really good texture, and they smell amazing. Highly recommend this use! Keep it in the fridge/freezer and it will last a good long while, so don't worry about using it all up quickly. Subbing out a little here and there will use it up in good time!

Yes, there is a very good peanut butter with chocolate chips cookie recipe in Vegan Subs. I have made it a few times for a GF friend. No other flours are used, just the coconut flour.

I bought the bag of flour to make these cookies and thought the same thing...now what do I do. I have since used just a bit of it in other cookie and brownie recipes and I love it. If a recipe calls for 1 cup flour I just put in 1/4 cup coconut flour. You don't want to put too much in. I love using it. Everything I it in has just a hint of coconut to it and its wonderful. I'm now ready to buy another bag of the stuff.
