I wanted Thai take out, but I am being responsible (!!) and having a quinoa bowl with odds and ends leftovers: sliced, baked Asian tofu, smokey beery slow-cooked pintos, avocado, hot sauce and crumbled muenster cheese from AVC. And red wine.

I'm thinking of making the butternut from the blog but I have no wine and can't have cashews. I'm prepared to wing this. Sort of. This will be eaten with the last piece of baked tofu (wicked good marinade and sauce) and some carrots, cauliflower, snap peas, and kale with a little red wine vinegar.

I've got Artisan Vegan Cheese mozzarella culturing on my counter as we speak, so it's going on pizza and in a marinated mozzarella salad type thing. It's not the melty one because I couldn't get yoghurt, but I think it'll be pretty good anyway.

I made pumpkin baked ziti for the first time tonight because I had just made pumpkin muffins and wanted to use up the rest of the pumpkin puree. I left off the bread crumbs because I hate bread crumbs and just sprinkled on some walnuts and oregano.

Super quick and yummy sautee of yam, kale, garlic, carrot and walnuts. I was too hungry to think about it for more than a few seconds and I'd boiled the yam a couple of days ago, specifically so I'd have some "fast food" when I needed it.

I lied. I ordered a veggie gyro and had pringles with it. By the time I finished everything I had to do today I was too tired.

Sunflower Mac from PPK blog. With broccoli on the side, and probably Gardein veggies crumbles tossed in for my partner. If I'm lucky, I'll get time to bake some cookies with my four-year-old, and those will be dessert!

Tonight we're having tacos with soy curls, shredded kale salad, avocado, chipotle squash cheese from AVC (I love this stuff so much) and smokey pintos.

leftover pizza from last night with gf crust (lazy bob's red mill mix), spicy tomato sauce, spinach, onions, mushrooms, olives, mushrooms & crumbled failed gf chickpea cutlet, which turned out delicious on pizza!
