Hi! I would like to make the Sweet Potato Brazil Nut Crunch Pie from Vegan Pie in the Sky (page 144-145) for Thanksgiving. However, my daughter is allergic to nuts, so I want to make it without the nut-topping. Should I bake it straight through (48-50 minutes) instead of breaking at 20 to add the topping, or reduce the cooking time? Thanks!

I think you should probably still bake it for the full time without stopping to put on the topping. You might want to start checking on it after 30 minutes or so to make sure the top doesn't brown too much and it doesn't look over cooked.

I have made that pie without the topping (and minus the rum and lime, plus upped the spices a bit). I just baked it for the full time, but ijdi is right that you'll want to check after a bit to cover the crust if it looks like it's getting too dark.

I know this is after thanksgiving so it might not be the most helpful, but I was thinking that I bet a topping could be made with coconut flakes (bigger pieces than regular shredded coconut)! It would probably need to go on closer to the end of baking so the coconut didn't burn, but I'm not sure. I will report back if I try it. I made this pie last night with the regular topping and it was amazing--if anyone is considering making this pie you definitely should!
