I made a batch of Miyoko's cream cheese this weekend now I have 2 cups of it. What should I do with it?
I don't eat a lot of toast and it is supposed to last for 2 weeks only.
I was thinking of adding some to home made ice cream but it's too cold to make ice cream now.
Any other ideas? I'm not sure if it's enough for a cheese cake. I wonder if it can be frozen?

I've never made the cheese myself but as for ideas to what you can do with cream cheese... do you eat dips? There's a lot of dip recipes out there that use cream cheese! Or bake a cake and make a cream cheese icing (carrot cake springs to mind! not made it for ages but pretty sure it's not hard to make vegan)

It's not enough for the cheesecakes in the book as they're written (I made the berry one and it used 4 cups- it was a huge cake!), but you could halve one of the cheesecake recipes and make mini cakes, either in cupcake liners or mini springform pans.
