I'm posting this here because I don't want those crazy Americans to hijack this by talking about cornbread or other bread stuffings with chorizo and such oddities. I've tried them and they're OK but not what I want with a roast dinner (and they don't go with bread sauce, anyway). So what's your favourite recipe for proper stuffing? In the past I've winged it with mashing up defrosted Linda Mc sausages with sage and onion and baking. Not bad, but I'm hunting for other ideas.

My Mum does a veganized version of Delia's sage, onion and parsley stuffing. I think it's in her Christmas book but you can probably find it online- pretty easy and tasty if I remember rightly: white breadcrumbs, sage, parsley, onion, pure/oil, lemon zest? I read somewhere about a chestnut and prune one which sounded yummy if you want something less traditional though.

Unrelated - I just had the Redwood sage, onion and cranberry bite things that they sent me for a much overdue blog review and they are miles nices than I expected for a stuffing type hit.
I think I was hoping for some thing sausagey, and I remember seeing something that used quinoa that I thought looked interesting but didn't save.

For the wedding I made stuffing sausage rolls. The recipe was something along the lines of: oats + (bread? can't remember) + onion + mixed nuts + silken tofu + sausage mix + parsley + sage + coriander + seasoning. Blender, oven, done. It was pretty awesome.
My other favourite is a combination of mushrooms and chestnuts and nuts and other stuffing fillers.

Your favourite! I think I used Asda's. I don't even know if it's still vegan, haven't bought it for ages. But it worked a treat for adding 'I used to be vageuly related to a sausage' flavour.

This thread caused me to read the Wikipedia entry for stuffing. You can cook it in a tray and it's still called stuffing?! It's a food that defies its very name!

Ok now crazy American here. Your stuffing isn't made out of bread? I'm curious.
(I think I'm doing a more traditional American stuffing for my inlaws as that is what they like. Bread crumbs, herbs, onions, walnuts, apples, celery, raisins (?), etc)
Edited to add: I looked it up and it seems like the British stuffing is more of a meaty dish than American stuffing. In which case I'm no help. I don't remember eating stuffing with meat in it when I was young.

now that i think of it, my grandmother (whose parents were Greek immigrants) used to make this lamb & rice stuffing for my family's Thanksgiving. but that's really not vegan, so never mind.

My mum makes a nut-based vegan (brazil nuts, cashews, pecans) stuffing. No bread. Onions and sage and garlic and red wine (and more, but I'm not sure what). She's Canadian but most of my family is English. She once put diced apples in it and it was delicious.
I think Americans are zany for their candied yams, but cornbread stuffing is pretty tasty.

I don't disagree with the tastiness of bread based stuffings, but the only bread I want on my roast dinner is in bread sauce form. Gallons of it. (Then I want to spread the leftovers on bread and make a sandwich - I KNOW!).
My childhood stuffings were sausage meat based, with onion, lemon and sage. And yes, I think apple may have gone in there occasionally.

I'm intrigued by the idea of bread sauce but I'm not much of a 'sauce' person. I also have to admit I'm not much of a stuffing fan either, but I make it because my inlaws like it.
