 Post subject: Coconut Milk: Canned vs Carton (Isa's Pumpkin Bread) HELP!!!

Ok, so this is my first year bringing a vegan assortment to my families thanksgiving dinner (ok mostly because my dad's new girlfriend is a vegan but that's beside the point) and on the VegFriendly Menu is Isa's AMAZING pumpkin bread. Unfortunately I sent my dad to do the Whole Food's Shopping and ended up with cartoned coconut milk instead of canned. It is very unlikely that I can get the canned kind in time. Will the cartoned work? Thanks all!!

I haven't made this particular recipe, but I think for a pumpkin bread recipe, carton milk will work just fine. Usually in quickbreads, you can substitute any milk. It might have less of a coconutty taste, but it should work just as well. Good luck!

I think the biggest difference is probably the fat content, but quick breads are pretty easy going as far as baked goods go, so I can't see this being a big problem.

Ok... I'm not so sure. I thought the coconut milk was like the magic ingredient in the recipe so I assumed it made a difference. Also does anyone know if it's canned or cartoned in the Rad Whip? Just realized that's also on the menu

For the rad whip, I think you are going to want the full fat real deal coconut milk. I've only made the rad whip twice; it's a little fussy in terms of setting up properly. Given the cost of coconut oil, this isn't a recipe I want to experiment on too much. Perhaps someone else here has.

For the bread, I think the canned coconut milk probably only adds a bit to the richness. It isn't going to impact structure or anything. I'm pretty confident that you are good on the bread.

the so delicious stuff isn't coconut milk. it's coconut beverage. (way way different.)

(there IS cartoned coconut milk and coconut cream made by aroy-d which is actual c-milk/c-cream, but i'm sure you're talking about so delicious' beverage, which is neither..)

anyway. any time a recipe calls for coconut milk, it's asking for actual coconut milk. the beverage is relatively new and if you ever use it in recipes, it would be substituting soy milk, or rice milk. not coconut milk. coconut milk (the canned stuff) has been around for ages, and that's what a recipe means when it's called for.

there are coconut milks in cartons (tetra pack). Aroy'd for example makes one. Maybe she's talking about that?

Yeah, but in a pumpkin bread recipe, it's most likely going to be just fine. For that recipe, it's really just the liquid that matters.

However, yeah, in the rad whip, you need real coconut milk (full fat) because the saturated fat is going to help your rad whip set up properly.

i don't think wholefoods sells aroy-d.

i would probably use 3/4 of the coconut beverage, and 1/4 of some type of an oil. (or maybe 7/8 and 1/8)
