We have Gardein (we didn't have it for dinner, it was a backup plan if my seitan wellington didn't work out), mashed potatoes, cranberry sauce, and stuffing. I'm going to make them into turnovers with the phyllo dough left over from the seitan.

Turnovers sounds genius!

We're currently eating leftover chocolate pumpkin bread pudding as a breakfast food. We have TONS of collards, mashed potatoes, and stuffing leftover... we're planning on dividing everything into single serving tupperware dealies so that we'll have a bunch of packed lunches for the next week and can just grab and go. Not super creative, though.

We actually don't have much leftover... I didn't go overboard making stuff and made fairly reasonable quantities of stuff. We have about half a homemade seitan roast left which we'll have as is for dinner, and a bit over half a pecan pie that we'll have as-is for dessert.

The one thing we have left that I'm not sure on are the mashed sweet potatoes. They're just mashed with grated garlic, a splash of unsweetened soy milk and a pat of EB. Thinking that maybe they could be turned into croquettes or something?

Roasted root vegetables, VWAV green beans, and two boats of gravy. I'm not quite sure what to do with all the gravy, as I have no protein or potatoes to be smothered with it.

you can probably use the gravy as a base for a creamy soup. add more smilk and mushrooms, corn, broccoli, whatever you like. i'm sure it'd work fine.

i can probably eat stuffing 365 days of the year. (i love it so much)

we're using our unturkey in a scramble and making unturkey noodle soup. mr. carrot looks more forward to leftover sammiches than he does thanksgiving day.

i'm sure anyone who doesn't want to eat the rest of their pumpkin pie can probably turn it into muffins. (and the crust can be turned into a topping.)

Might be too late for most of you, but leftover Tofurkey is great in recipes that call for chicken or turkey like-seitan. Like a pot pie, or the irish stew in AFR. I have done both of those before, and they come out AWESOME.

I don't have a ton of leftovers either. My seitan roast was a disaster and got thrown out. The cornbread stuffing we made (from Terry's blog) was amazeballs. Last night I made the jalepeno-corn gravy from Vcon, and some chickpea cutlets and the leftover stuffing and it was SO GOOD.

I think taking stuffing, and like making patties and shallow frying (or stuffing balls and deep frying) sounds really good!

A good bit of my leftover unturkey is going into a pot pie this evening. The rest I'll freeze for later shenanigans. I skipped making dressing this year, so I only have lentils du puy salad left over. I just ate some for lunch.

I'm guessing that the leftover pumpkin cheesecake and ginger coconut ice cream won't be a problem to finish off.

We still had a bunch of sweet potatoes, a dollop of mashed, some stuffing, and a fair amount of gravy in the fridge, so today I found a way to use them all up in one fell swoop. The sweet potatoes became AFR drop biscuits, I combined the mashed potatoes and stuffing with some spices to make breakfast "sausage" patties, and then we poured the gravy over the whole mess: yum. Effective use of leftovers? Check. Epic brunch? Doublepluscheck!

Just had a sammich with Vegan Appetite turkey loaf(this came out really good and juicy), cranberry sauce and one of Uncle Epidiah's stuffins smashed in there. It was delish! I'm trying to make my mashed potatoes last a long time because I never make them this way (whipped in the kitchen aid with fyh sour cream and earth balance). SO GOOD!

I had a slice of tofurky roast with rice, brussels sprouts, and gravy for lunch. I still have a huge container of stuffing, which is unheard of by this point.

we made potato pancakes. (we just scooped some mashed taters onto the pan and flattened them out and left them until they had a nice brown bottom and flip!)

I mostly just have leftover mashed potatoes, so I'm going to make some shepherd's pie with them.

Although I like Desdemona's idea of combining that with stuffing... I will need to try that. I also have loads of stuffing to use up!

Stuffing veggie burgers are fantastic. Do it!

I did poutine the other day, but with FYH, which didn't melt well but the flavor was there. But with tots? I'll have to give it a go.

Lunch is going to be a bowl of stuffing, for lack of time and creativity.

I love this thread.

Current permutations of our leftovers:
- brown sugar/orange sweet potato casserole became a chipotle sweet potato bisque with chorizo
- roasted veggies became ethiopian atkilt (with kittee's niter kibbeh)
- cranberry sauce partially used in VCIYCJ walnut cranberry thumbprint cookies (I really want to try these cookies with this bourbon orange cranberry sauce)

Next up: some kind of barbeque with remaining cranberry sauce...?
