Split pea soup with all the vegetables in my fridge

Ethiopian leftovers forever (or until I can't take it anymore or they run out).

Making bread for tofurky roast sammiches with leftover bean salad. And I finally get a slice of pumpkin pie cheesecake!

It was a snacky night... some Triscuits when I got home from work, some PB&banana toast, some trail mix...

Wine and popcorn. It's been a rough day.

Steamed broccoli with peanut sauce. Trying to decide what else I want!

Mango BBQ beans from AFR with cornbread (made from a boxed mix)!

Tonight I made a TVP shepherd's pie.

Mac daddy with broccoli and I'll probably make a second pan of sourdough mushroom stuffing to enjoy tomorrow (stuffing always tastes better as leftovers IMO).

Tofurky and rice soup and poutine.

I made this, veganised. Hubby really liked it, even after he was ragging on me for being vegan (playfully), and he doesn't like kale. I know, how is that even possible? But he doesn't.

I omitted bacon, used almond milk instead of crème fraîche and topped with nooch and breadcrumbs and EB instead of cheese. Really happy there is just enough left over to have for lunch tomorrow.

Tater tots and cranberry kale.

a staple in our rotation... a variation on lentil dhal that i put a bunch of spinach in. it was a much needed warm and cozy dinner. brr.

We went out. I had a cup of chill, and then a "winter pizza": mashed sweet potato, caramelized onion, apple, and soyrizo on flatbread with Daiya. It was good.

Unturkey pot pie.

Oh man. I need me some of that pizza.

Tonight I'm thinking of making either Mac Daddy or DEOTS Tempeh Wingz (or both if I'm ambitious). I've got a head of cabbage whimpering for attention in the fridge, so that's going to be my vegetable, probably as a citrusy slaw.

Something omni for the boys, frozen veggie nuggets for me, home fries and salad.

Leftover tofurky rice soup, rolls with earth balance, and *fingers crossed* the last slice of pumpkin cheesecake.

Desdemona's soy curl fajitas, with avocado, pineapple salsa and arugula. Leftovers from yesterday.

My boyfriend and I ate an entire Tofurky feast last night. And we don't even really love it...it was just on sale. Including the chocolate cake, which I don't even like (and yet ate).

We didn't even have any vegetable side dishes to mess with our mass consumption of processed soy protein. So that's how you do that.

Tonight? Cabbage a la Vijita and some kind of Dirt Candy-inspired soup for my soup club.

I think tonight is the night I can finally cook a Retro KFC-breaded tofu dinner, since we're finally done with the Ethiopian leftovers from t-day. If so, it'll be breaded tofu (or maybe seitan, for me), mashed potatoes, baked mac & cheese and gai lan. Something like that.

I'm sure Tofurkey will be hiring vijita to be their spokesperson: "Hey, it's not that great, but you are going to eat it all in one night, so you better buy two!"
