I had leftover banh mi filling and tiny corn tortillas in the fridge. Taco night was thoroughly enjoyed.

Last night was a super tahini-fied new farm mac. Tonight, that retro KFC tofu dinner.

Leftover mango BBQ beans, corn bread and brown rice.

Made 2 huge lasagnas... One vegan gf for me and one vegetarian for husband. They contained fried breaded eggplant, spinach, mushrooms, olives, red sauce and cheese. My cheese was Tofutti cream cheese and sour cream mixed together with a bunch of herbs and spices mixed in. We are going to freeze them cut into individual servings and eat them until next year.

Kidney bean and butternut squash jamba from AFR. That recipe makes ridiculously large portions and that makes me very happy.

I've been thinking about making this for a while - glad to hear the portions are hefty!

Harvest vegetable chowder, using blended corn as the creamy component. It was really tasty!

An approximation of satay sauce, with lime-y pan fried tofu, veggies and rice.

Amazing seitan donair with vegan cheese & coconut "donair" sauce, with a side of roasties with ketchup to dip. Plus a delicious fruity drink :).

Arabian rice and lentil soup (AFR) and the last slice of pumpkin cheesecake (VPITS).

Spaghetti squash with nooch and margarine pre-ballet and a baked potato with tempeh crumbles and homemade cashew sour cream post-ballet. Maybe I'll eat something not as starchy, but I doubt it. Depending on how I feel post-class, I might make a smoothie with some blueberries and hemp protein.

Taco night! I made gimme lean ones with taco seasoning, and tater tot-home fry ones with refried beans. I made my bro two with rice and beans, refried beans, onion, tomato, and tofutti. Baked them in the oven for fifteen minutes and they were crispy in all the right places.

It's too hot to cook, so probably toast and a Jokerz bar. fork summer.

Soba noodle/black bean/dry-fried tofu/veggie stir fry with Desdemona's killer glazed tofu sauce (plus added peanut butter). Making dinner for my parents and I want to impress them with something super tasty.

It'll be the curried split pea soup from VWAV. With a wedge of fresh baguette perhaps.

Chilli in the slow cooker. Smells gorgeous and I'm so hungry!

I think it's going to be Leek and Bean Cassoulet from Vcon. Or maybe pasta and beanballs. Something with beans!
