I don't have a good cookbook, but I use millet to replace couscous. The cooking method is different, but the end result is very similar, but with a pleasant, millety taste. You cook milled just like white rice, and I actually use my rice cooker to make it most of the time, and often cook it in veggie broth to infuse flavor.
