I had some sunchokes in my CSA bag last week and somehow I thought they would be very good in a stew with some beer. Then I remembered how much we liked the Beer-bathed Seitan Stew from Vegan Eats World, so I made that, with sunchokes instead of turnips. It was awesome, even better than the turnip version. Sunchokes really do pair well with beer.
