In the past I've always bought Daiya in bulk and frozen it. So I could consume it over a period of months if I wanted to. But this option isn't available in my new location, so I bought one of the little 8 oz. bags and am not freezing it. It says it's best used within a week of opening the package. I'm hoping this is a conservative estimate as I live by myself and am not sure I'll get through it in that time. How long will it really last? Or is seven days an accurate estimate?

you should just freeze it as soon as you open it. you can still take the shreds out of the package and use them from frozen.

I feel like it lasts longer--I mean, when it goes bad, you can tell, right? Visible mold? Change in odor?

Yeah, I do what ijdi said - I've definitely had it go moldy in <5 days after opening before.

Or less even. I just use it frozen. The stuff does go off pretty quickly--it smells even worse than usual and/or gets slimy.

Yup, the bag goes straight into the freezer and I use it frozen. In my fridge experience, it's moldy inside of a week.

I feel like mine never molds. I use it for two weeks or more. I'm a little concerned now. I would see it, right? White or green mold?

Mine takes a long time (definitely longer than a week) to go bad in the fridge, but I use it frozen anyways. Just in case.

i think it could depend on how long it's been sitting at the grocery store. sometimes it seems i've kept it for a few weeks, where other times, it lasts a week max. it always goes in the freezer now.
some whole foods that have a refrigerated "make your own pizza" section with pizza ingredients package it in their own containers and you could always ask them to package a smaller amount for you. even if there's no make-you-own section, it couldn't hurt to ask if you can buy a little bit from the pizza counter.

I just threw out a block of Daiya Havarti. :( I thought it would make it past the 7 days, but it did not. I didn't want to freeze the block, but I should have cut it into smaller pieces and done so.

Yeah, the shreds always last weeks for me in the fridge, but I squeeze all the air out of the package and secure it extremely well. The freezer works too, but sometimes I plan to eat it up before long or I don't want to top something with frozen shreds.
I had a bit of the cheddar wedge in my fridge (maybe like a one inch cube) leftover for a few weeks, because it got tucked behind something. It was still 100% fine, but a bit dry as the package wasn't totally closed. Maybe my fridge is magical.

I squeeze the air out of it and store it in a ziploc-type bag (which I have also squeezed the air out of) and it still goes bad. I wonder if it has anything to do with humidity or something like that?

It got pretty hot here in the summer, and now it's cooled down again, and my bags of Daiya have all held up. It's really got me wondering now.

Another freeze-it person here. I don't use it much so I couldn't keep it in the fridge anyway. It has always done well in the freezer for me. I even froze a block once and my hazy memory says it was okay, but I don't remember exactly what I did with it.

The wedges last for weeks for me, but I freeze the shreds immediately to prevent mold.

The shreds last for weeks in the fridge for me, but I keep them in their original bag, make sure all of the air is squeezed out of the bag, and then I use a clip to fasten the bag closed. When I haven't sealed it up like that or squeezed the air out, they've gone moldy really fast. You can definitely tell when they've gone bad!

I've had daiya stay good for up to a month in its original bag, with air squeezed out and the top rolled down with a rubber band around it. Quality does drop off after about a week, as the cheese starts to dry out. Green mold after a month, though.
