We are getting a LOT of carrots in our CSA. I have been roasting them, doing the sweet and salty carrots from AFR, making curried and roasted carrot blended soups, but I am kind of getting bored of all all of these. I don't really like carrots raw unless they are pickled for banh mi, so cooked (and savoury) suggestions would be most welcome.

What about the curried carrot dip from V'con? Also, the other day I made these roasted carrots from the edible perspective. They are tossed with a mixture of tahini, cumin, cinnamon and maple syrup. They were really good, and a nice change from plain roasted carrots. Also, carrot muffins or the carrots raisin spice chews from VCIYCJ.

I put finely shredded carrots in things like shepherd's pie, stews, etc. because my youngest does not like cooked carrots but does not mind them like this. If you are getting tired of seeing them and just want to use them up and get the nutritional benefits.

I love going to mexican restaurants that have Hot Pickled Carrots (also called Mexican Hot Carrots) at the salsa bar. Been kind of obsessed with them since I was a kid. They seem pretty easy to make! you like pickled carrots for banh mi, so maybe give these a try. I have been meaning to for a while now. (disclaimer: that was a random recipe I found online just now, someone else might have one that they have tried)

Pickle them all! But make different kinds of pickled carrots form all over the world: Thai pickled carrots, Mexican pickled carrots, Indian pickled carrots, Polish pickled carrots, etc. Document it all now, and come October you can do a pickled carrots theme for vegan mofo!

I didn't read everything (sorry!) but if it hasn't been said, and you have a way to juice them (perhaps with a couple of granny smith apples) that is delicious. Or if it has been said, I second it.

Oh yeah, mexican pickled carrots are one of my favorite things in the world. *sigh* It is so hard to get jars of them with just carrots here though.

I would slice, blanch, and freeze for later use in recipes that aren't totally dominated by carrots...recipes you might need 2 or 3 carrots for.
You're sick of them now, but in a few months you'll probably be wishing you had them and didn't have to buy more.
