I am going to make this for sure but I am going to muffin and freeze because I will eat the whole damn loaf if I make it like that.

I'm always looking for more ways to use my starter. That bread looks like it has great texture. Thanks for the idea!

Mmm I bet that is really good. Makes me wonder if I could resurrect the very sad very old very neglected starter lurking in the back of my fridge

I made this, inspired by you and a big bunch of free bananas. I left out egg replacer because banana is one, and used oil instead of shortening. Pretty good!

I made some in mini loaf pans and they were really tasty! I followed the recipe excepting cutting the sugar down to 2/3 cup and I used peanuts instead of walnuts. My starter is on the thick side and I didn't add enough water, which resulted in a slightly stodgy middle; however, it was still quite light, great bite (not crumbly at all), and the taste was unlike any banana bread I have ever tried -- in a good way.
