Hey guys!
So I work graveyard and have to bring my lunch everyday because the restaurants where I work are not friendly/healthy in anyway lol...
I have gotten kind of burned out on normal lunch stuff like sandwiches and salads etc.. So I was thinking that I could make some casseroles and take some to work each day. Plus I’m not the only vegan in my house so it would be convenient for everyone to have ready made leftovers in the fridge lol. I figure this will get me out of my lunch monotony and make it so I only have to cook every few days.
So my question to you guys is, what is your favorite casserole? A recipe or link to a recipe would be awesome too but I’m not above googling stuff on my own :) I just need some ideas.

Do you have Veganomicon? It has the best casseroles! The Southwestern Corn Pudding is one of my faves. The leek and white bean cassoulet is also great. I'm not even a pasta fan, but I like the pumpkin baked ziti.

My all time favorite casserole is the "Creamy Corn-Crusted Tempeh Pot Pie" from Viva Vegan, other recipes from this book are great for leftovers especially the Arroz Con Seitan.
From the veganomicon I love that Cauliflower and Mushroom Pot Pie with Olive Crust so much. Also, the Mac Daddy, the Jambalaya, The Moussaka, the Lentils and Rice with caramelized onions, and the lasagna.

I'm not much of a casserole person but I think I have to try most of the one Desdemona posted. Also the Creamy Corn-crusted tempeh pot pie is good. I wasn't a fan of the Moussaka but that is just my style.

A veganized version of "Spaghetti For Peanuts" from Diet For A Small Planet (I use the cheddar flavored Daiya) is my favorite casserole right now. I love the Leek and Bean Cassoulet from Veganomicon (I wasn't sure what a leek was until I tried it!)

Easily enchiladas. Black bean and sweet potato! I also make baked ziti quite a bit. I guess that's casseroleish.

I second the Pumpkin Baked Ziti from Veganomicon. I also make big casseroles of polenta, baked with a thick layer of pasta sauce and Pine Nut Cream (also from Veganomicon.)

Ratatouille is my favourite Chickpea and aubergine Tomato and bread stew
Would curries count? Dahl with tomato and aubergine, with roasted cauliflower on top Roasted masala potatoes

Oooh excited to try that tahini chickpea grain casserole- looks great. I love chili with a cornbread topping too..and agree with all the v'con suggestions, especially the moussaka :)

Tater tot hot dish! A Minnesota classic!
Make whatever cream soup base you use (I typically use about 1.5 cups almond milk, a little flour to thicken, some no chicken boullion, poultry seasoning, salt, pepper) heat it, whisking, until thick. Stir in whatever burger sub you prefer along with some sliced mushrooms, it should be about a 1 pound equivalent of burger - so not "soupy or thin". Pour that into a greased 9x13, top with a layer of frozen tots, and bake at whatever temp and time you need to make the tots golden. You can also put a layer of any cheese sub you like under the tots, but the traditional recipe doesn't do that.
Watch Grumpy Old Men or Grumpier Old Men while eating.
