I needed to use up some sourdough starter and there are baked goods that call for it! I had no idea honestly. I made this banana bread (post linked below, recipe from KAF) and honestly it's my favourite banana bread recipe now. If you keep a bread starter in your fridge I highly suggest trying it out.

I made this, inspired by you and a big bunch of free bananas. I left out egg replacer because banana is one, and used oil instead of shortening. Pretty good!

I made some in mini loaf pans and they were really tasty! I followed the recipe excepting cutting the sugar down to 2/3 cup and I used peanuts instead of walnuts. My starter is on the thick side and I didn't add enough water, which resulted in a slightly stodgy middle; however, it was still quite light, great bite (not crumbly at all), and the taste was unlike any banana bread I have ever tried -- in a good way.
