I went with my weirdo cravings. Savoury waffles with beets and Japanese turnips in a smoked tomato sauce.

Chorizo and egg fritatta from hearty vegan meals. Saltine toffee squares from vegan food gifts for dessert!

I'm going to attempt turning the blog butternut Alfredo into lasagna. I need to bring a nice lunch for myself tomorrow since we are having a work buffet thing.

Homemade General Tso's tofu with peas, brocolli, and mushrooms, rice pilaf, and soy sauced kale and onion.

A ton of hummus and pita, and 3 banana everything cookies from VCIYCJ. I need to stop with the snacky dinners.

I dont know yet. It had better be the most forking delicious thing ever because I hurt myself making it. I underestimated the amount of standing involved. *whimper*

It just went in the oven! It's Vcon ricotta, spinach, leftover squash, and the blog sauce. It looks good.

I had a huge amount of these very long, very sweet red peppers. So I stuffed some of them with an herbed quinoa and TVP mixture into which I stirred some leftover punk rock chick pea gravy to help glue the stuffing together and add flavor. The texture from adding the gravy reminded me very much of baking something like that with egg mixed in, although it's been a while since I've eaten anything with egg in it, so maybe I'm way off. Anyway, it turned out well. The sweetness of the peppers, slight bitterness of the quinoa, and tart lemonyness of the gravy all complemented each other. Also had some roast pumpkin on the side.

Dinner was a huge success!

Here is what I did: blog butternut Alfredo made with half onion and broth instead of wine. I layered in chopped spinach and Vcon ricotta with the leftover squash mixed in.

Since the sauce is pretty thick, it got sort of baked in cheesy on top, which is great.

The only thing I'd change is to mayb increase the garlic.

Kidney beans and coconut thyme rice, plus a salad.

We went to a pub that is vegan friendly. I had beet and potato pakoras with spicy quince chutney, a cup of potato leek soup, and a beet/squash/hazelnuts/greens salad with a small dish of fries. It was a nice mix of fried and healthy-ish. And a work event/paid for by someone other than myself.
