I just got the shreds for the first time. They feel way odder than the wedge to me. Used what I wanted and the rest went right into the freezer.

I have had wedges that took me 3 weeks to eat and they have never gone bad. I was worried at one time hence me post in the "Should I eat this?" sticky. I did eat it and it was so good.

Depends on where I buy it. My local HFS used to have some packages that still had weeks to go before the expiration date and they were green-molded in the fridge. I've bought stuff from there that went moldy within days. I've had some of this stuff mold while in the freezer.

But now my Stop and Shop sells it (only the cheddar or mozzarella shred) and like others have mentioned, I can keep an open pack for a month and it'll last just fine.

Wow, thats amazing. I've bought mine from various sources even Pangea (where it comes frozen) and still molds up within a week.

I must have a store that always has old dayia being sold, cause the shreds go bad in like 4 days if I don't freeze them. I've also bought bags that were already totally green and fuzzy inside, so check as best you can at the store too.

I spoke too soon. I bought & opened a pack just 2 weeks ago and when I went into it this morning almost the whole thing was green mold. Yecch! That hasn't happened to me in years! I guess they'll have to go right into the freezer when I buy them again.

I freeze it too, but if its in the fridge, mine has been 2 weeks without going bad

ive had some go bad within days and some that has lasted for several weeks and been fine.
