How to I make my gluten-free (and vegan, of course!) cookies keep their shape? I used the Gluten Freida flour recipe to replace regular flour in a cookie recipe, and used flax seed + water to replace the egg. The cookie tastes great, but it was supposed to be cookieS. My cookies melted in to one giant sheet of cookieness. I want them to remain round like cookies.

I'd really recommend a tried, tested and true GF vegan cookie recipe. That's entirely too many changes to make to a recipe for it to turn out right.

I would agree with Mars. At least until you are very comfortable with gluten-free, vegan baking I would stick with tried-and-true before branching out.
