I invented the pumpkin chai! I put a few tbsp of leftover pumpkin (had some left from Isa's chocolate pumpkin bread recipe) in the blender with chai concentrate and soymilk. I blended it, then heated it up and topped it with cinnamon, pumpkin pie spice, and nutmeg!

I've been doing something like that, too. Making pumpkin chai latte out of pumpkin puree, chai, sugar, soy milk and cinnamon. So good!

Tonight I had the vegan harvest pizza from American Flatbread. Last night I had the mandarin chikin gardein over rice. It was good.

Pre cooked lentils, pre steamed beets, bag of kale. Sauté with coconut oil and balsamic vinegar. Eat. If I'm feeling extra fancy, a quick cashew cream sauce with cashews, water. Garlic, lemon, salt and pepper and dried basil thrown into the magic bullet.
But some nights seaweed rice cakes and edamame hummus is dinner in my book!

lately i've been eating the same meal every night:
a bowl with quinoa, pan-fried tofu, and broccoli topped with a peanut-y thai-ish sauce. delicious and super filling. also relatively painless to prep for, cook and clean up each night.

Today I had my first fluffer nutter sandwich. (PB and marshmallow creme . . . I used almond butter and ricemellow creme.) I now understand the awesomeness.

Kitchen sink lentil soup based on the Arabian Lentil soup recipe from AFR but with brown lentils, ginger, potato, daikon, burdock, and some cabbage, minus rice and onion. I'm clearing out the fridge and not buying more food before I visit my family for the holidays, hence the random ingredients. It should be ready in 5 minutes and I have no idea if it's going to be any good or not...

How bad is it when you eat canned sweetcorn mixed with a tonne of hot sauce (out of the can) regularly? Because I tend to do that quite often at the moment. Also canned chickpeas, mixed with marinara and nooch, cold (but not out of the can, obviously!)

I just consumed the end of a bag of TJs flaxseed tortilla chips (so, the tiny, extra-salty bits) and half a bag of baby carrots dipped into a mixture of Veganaise and sriracha and called it dinner. I'm praying my digestive system doesn't hate me in the morning.

1 can artichoke quarters+1 can chickpeas+.5 can diced tomatoes+olive oil+chopped garlic. Warm over the stove. Oh man, this was so good.

I've only ever heard "ground round" used to indicate ground beef from certain cuts of meat. Not to say there isn't vegan ground round, but not everything going by the name ground round is vegan.
