I had some sunchokes in my CSA bag last week and somehow I thought they would be very good in a stew with some beer. Then I remembered how much we liked the Beer-bathed Seitan Stew from Vegan Eats World, so I made that, with sunchokes instead of turnips. It was awesome, even better than the turnip version. Sunchokes really do pair well with beer.  (had to post this one, since my avatar is a sunchoke)
