I've only been vegan just over a year and while i love cooking dinners, I've never really delved into desserts and anytime i've tried i've made a complete mess of it!
Obviously this had to be remedied and after going without my favorite dessert for over a year i decided to have a crack at it.

This was fickin AMAZING and didn't last long at all!!!! (and i'm also quite impressed with myself lol)
My OH (who isn't vegan) asked jokingly if it was made from whipped tofu, i laughed and said YES! hehe (he loved it too, and has commissioned me to make a vanilla one next time) :D

The recipe i used called for graham crackers and being from the uk i have no idea what they are! lol
I was going to use digestives for the base but couldn't find any without milk in!! So i used Sweetmeal biscuits instead which to me are just like digestives anyway.... ?

The recipe was one i found online and rather badly of me I can't find the link for it now :S

As I'm making another one at the mo and have it handy heres the recipe:

13 digestive biscuits
2 tbsp cocoa powder
1/2 cup vegan butter
1 tsp icing suger

1 12.3 ounce pack of extra firm light silken tofu
1 8 ounce pack of tofutti cream cheese
3/4 cup sugar
1/2 cup milk (the recipe called for hazelnut but i only had soy)
1 lb dark chocolate
2 tbsp lemon juice
1 tsp vanilla 3 tbsp cornstarch

Preheat oven to 350 F / 180 C.

First grease an 8 inch tin, and line it with greaseproof paper. Then break the biscuits into a processor and process until crumbs formed. (I don't have a processor so did it the old fasioned way with a bag and rolling pin lol)
Next add the cocoa powder, and icing sugar - pulse for a few seconds.
Then add melted butter to the biscuit crumbs and process for half a minute.

Drain tofu and put it and Tofutti cream cheese into food processor. Blend until smooth.
Add sugar & milk and process again until sugar dissolved, about 3 mins.
Add remaining ingrediants (except chocolate and biscuit base) and process until completely smooth.

Melt the chocolate, add to mixture and mix in well.

Pour the mixture into the base and bake in the middle of the oven for about 55 mins (do not allow to brown).
Remove from oven and allow to cool. Refidgerate until completely chilled. (Overnight is usually best).

Enjoy! :)
