I love this recipe, which came from one of my dad's fly fishing buddies. This is the first year I've veganized it, and the results were great! So I thought I'd share in case anyone wanted a super easy dip to make in the microwave.

"Shut Up and Eat" Corn Dip

8 oz container vegan cream cheese (I used Tofutti)
1 stick vegan margarine (I used Blue Bonnet Light)
16 oz frozen corn
2 tbsp finely diced jalapeno peppers (or a little more if you want it hotter)
1 tsp ground cumin

In a microwave safe bowl, dump the cream cheese and vegan margarine in together and microwave 1 minute. Stir, and microwave 30-45 seconds more. Keep doing this until you are able to whisk the cream cheese and margarine together completely. It only took 1:45 for me in my 1100 watt microwave.

Then, microwave the corn until hot. Stir it into the cream cheese/margarine mixture, and add the jalapenos and cumin. Stir, taste and add more cumin if desired.

Enjoy with Fritos Scoops and try not to eat the whole bowl at once. ;)

Trying this tomorrow, with the addition of some Trader Joes vegan chorizo...minus the jalepeno because I think that'd be too spicy. We shall see but it sounds yummo to me!

Um..YUM. Added in Trader Joe's vegan chorizo and it was a hit! The meat eaters loved it! And it was sooo easy to make. And healthy, because it's vegan;)
