This looks amazing!! Husband and I want to do a long trip to NZ so badly (well, or a short trip for that matter, but we could definitely fill a month with the things we want to do!!) - we love hiking, kayaking, he's a mountain biker... Did you try out the restaurant that has a gabillion kinds of dosas?
So jealous. Once in the grocery store I ended up talking to a bagger randomly about vacationing in New Zealand and she had gone because she used to own a yarn shop and she sold enough of some brand of yarn for them to fly her out but she basically did...sheep farming and wool-related tourism the whole time. What a waste when there's clearly so much gorgeous beautiful stuff there!!

I have to go to Aotearoa (New Zealand) now. It's decided. (It's not even that far. I don't know why I haven't been before.)

It's not totally vegan afaict, but it came up when I was wondering randomly how vegan-friendly a NZ trip would be and was bowled over by how many options sounded good.
