Help I discovered a case of unsweetened, low-sodium ketchup in my pantry. Any suggestions for using this up? In cooking, I've been using it in place of tomato paste.
For baking, couldn't I use it like applesauce to make a recipe moister? i.e. in a spice cake, perhaps? I remember years and years ago Campbell's soup used tomato soup in baked goods.
Any recipes to share? Thanks

I got nothin', but I'm not much of a cook anyway. Maybe you could swap some with a friend to get something more useful?

Well there definitely are tomato soup cakes, I got no recipe but I bet ol'google would. I think it sounds yummy, but yeah, maybe not so much that you'd want to make a case worth of it! Giving them to friends sounds like a good suggestion

Sloppy joes, lots and lots of sloppy joes. Ketchup with yellow mustard, apple cider vinegar, sugar, and salt is an easy sauce for them.

Thanks while i have not made it, i totally recall seeing a recipe for a chocolate or spice cake that did call for using a can of condensed campbell's tomato soup. i'm sure if you do a google search, you will find a recipe that you can veganize. if you can't use it up, pass it along to some friends or to a local food pantry/kitchen

Let us know what you end up using it for! You should also make those tomato scones or biscuits people were making a while ago, they looked too good to be true but also used tomato something to give flavor.

Remember tomato is a fruit, so think of whatever recipes that already use fruit purees. You can add it to a spice cake--really nice. Try subbing it into a pumpkin spice cake recipe in place of the pumpkin puree.
You can use it in ice cream. There's a recipe in my book for that, and while some testers found it refreshing, I thought it tasted like tomato soup.
You can put it in muffins or biscuits (think sweet potato biscuits) or banana muffins.
You can put it in breads. Sub it for yogurt, applesauce, or puree in any existing bread recipe.
