So My coworkers are deciding to have a "Thanksgiving Luau Potluck". I was totally planning on bringing an awesome pumpkin cheesecake for dessert, but now that it's Hawaiian themed, I have no idea what to do. Anyone have any suggestions?!
For sweets: toasted coconut or pina colada cupcakes (or full size cake); pineapple upside down cake; haupia (coconut pudding, thick like jello, served in chilled squares, made with cornstarch, super simple); coconut cream pie, haupia-chocolate pie, or sweet potato pie with a macadamia nut crust; banana bread; pani popo; and anything with passionfruit.
For savory, poi (mashed steamed taro), taro rolls, veganized lumpia, veganized 'chicken long rice' (the long rice is just cellophane noodles, cooked in broth with plenty of ginger and veggies), sweet and sour tofu/tempeh/fake meat, potato-mac salad, carrot pineapple salad, maui onion dip, really anything with sweet potatoes, avocado and tofu poke, coconut 'shrimp.'
