I typically use the Wayfare "We Can't Say It's Cheese" spreads for my grilled cheese.

Oh my gosh, that's a great idea! Too bad I just went to the natural food store yesterday... will have to work in another trip soon!

I just had grilled cheeze for dinner! I make a "chicken" grilled cheese: I take some of the steamed white seitan (recipe from Viva Vegan) and I slice it and sprinkle daiya cheddar on it and sandwich it between some multigrain bread before I throw it on the George Foreman Grill. yum!

I made a batch of the Colby cheese from the Uncheese Cookbook yesterday (using the Chedda variation, which adds miso) and it turned out excellent. I forgot how good this stuff is. Just did a grilled cheese in my panini press with it and it was delicious- the cheese doesn't melt but it gets soft.

I had a fantastic grilled cheese last night...white cheddar cheezly, sliced campari tomato, sliced fresh red fresno pepper, sourdough bread.

I bought that book years ago & have yet to make a recipe from it. I think you've convinced me to make this tonight!

I missed a couple of pages of this thread, but I was bored at work so I went back to read them and was amazed by erinwyso's cheese! Holy crepe that grilled cheese picture of it looks fantastic.
So despite having an open bag of daiya in the fridge and four unopened bags in the freezer, it's chilling in my fridge right now.
