Incredible recipe - Vegan Butter!

I'm brand new here, so I have no idea if this has been posted before, forgive me if it has.

I had the xanthan gum in my kitchen already, ordered liquid lecithin from Amazon, and used a hand-held mixer and a glass measuring cup to combine the ingredients because I don't have a food processor. I also halved the apple cider vinegar because that taste came through in the first batch. Then it was PERFECT. Taste, color, texture, meltability....my husband, my mother, and I were all very impressed. I tasted real butter and then this recipe for taste matching and it's right on. I haven't tried it yet in baking, but that should work perfectly also.

This person is a genius.

I love that butter! Really should make a new batch sometime soon. It tastes good on toast etc., but it's also very good for baking.

Get your hopes up! I was blown away. mixed it with honey today...tastes just like the honey butter I had at Texas Roadhouse. (I'm vegetarian transitioning to vegan). Glad to hear it does work in baking too! Really want to make pie crust with it because all I have is hydrogenated shortening to work with. The local Wal-Mart used to carry Earth Balance if I remember right but no more.. =/

I made this butter and I think it tastes more like regular butter than earth balance. Earth Balance is good, but the salt overpowers it.

Agreed! Much better than Earth Balance. I made this vegan twinkie filling with it, subbed it for both the margarine and the shortening. Added a little more malt powder than the recipe called for...and ate half the bowl before my cupcakes were out of the oven (don't have a twinkie-ish pan yet.) Ridiculous yummy.!

we originally tried bryanna's with granular lecithin, soaking, blending etc - so not worth it, and didn't really do it. We just got some liquid lecithin from iherb and it worked perfectly.

Cgvegan - which coconut oil are you going to use? All the ones I see in the UK are unrefined. And let me know where you get your liquid lecithin too!

Amazon has refined coconut oil and various leicthins.

It says 'suitable for use in cooking' under product features.
