I'm making Bryant Terry's Black-Eyed Pea Fritters and collards tonight.

Hottie Black-Eyed Peas and Greens. Not sure what else. Maybe some sweet potato fries.

Spicy collards, black eyed peas, and rice thing I am sort of winging in the crock pot and corn bread!

Leftover deep-fried veggie ribs that make my stomach hurt so bad but taste so good.

Leftover Pad See Ew with Savory Baked Tofu from Vegan Eats World. Awesome even the next day!

Sauteed kale, peppers, and onion, a Boca chick'n patty, french fries, stuffing.

Bean, rocket (arugula), and avocado salad with pumpkin seed oil.

I made the ginger tomato chickpeas from Vegan Eats World. It's delicious, but I didn't cook my chickpeas long enough, so that's kind of annoying.

Mango BBQ beans with quinoa. I added a can of black-eyed peas to the recipe, since it is New Year's Day and all.

Wow. Isa's Hoppin' John was wonderful! The tahini/Louisiana hot sauce combo is amazing.

Buffalo tempeh, coleslaw and cheesy baked potatoes.

I spent a long time making these jalapeno poppers, and they were only okayish. Edible, but nowhere near delicious.

To me, anyway. My boyfriend liked them.

I roasted some beets, Red Kuri squash and potatoes, but ate only the potatoes...

Mr8 made jacket potatoes with baked beans.

I spent three last several days in the kitchen and now I'm feeling lazy, so either veggie burgers, tots and asparagus or pasta with leftover garlic oil marinara sauce i made for new years... Decisions, decisions.

General Tso's tofu, veggie dumplings, vegetable roll, white rice, and lo mein. I've ordered from this place so many times the past couple weeks they must be sick of me. But it's the last time for a long time, so why not!

Congrats on your accomplishment! Home made tofu is a delicacy to be savored. I haven't had it in years, but it tastes so much better than anything I've ever had from the store.
