My mission for this year is to come up with the best homemade veggie burger that I can muster. I like something mushroom heavy, not crumbly, but would like something I could grill too. Lots of test batches the hubs is happy to eat.

You know, I don't think i've ever made a veggie burger? I remember a long time ago trying to make some kind of tofu...patty...thing that was fried and fell apart. I can't remember what it was supposed to be, though.

I always wanted to veganize a Jamaican patty and I was planning on using tempeh, miso and mushrooms as I feel like those are the tastes and textures to best replicate what I used to make. I'd use the the Canadian Living Country Cooking's patty recipe as my template for measures and spicing. I've been thinking about this for a couple of years and haven't done it yet. Someday...someday...

Marshmallows (I think there's a recipe in La Dolce Vegan). Have been putting it off due to my slight fear of hot sugar, even though I've successfully made fudge before.

Oh, brownies! I haven't tried a new recipe in ages, but I really want to find the best (easy) brownie recipe. Crackly-top and all. Every one I've tried is either too oily or falls apart. They sell the donuts at state fairs and apple-centric farm stands and whatnot. Sarah's look good, but I have to admit, I want the real deal (which is deep-fried).

I mean, I know that apples are an autumn thing, but it seems weird that apple juice is so abundant when cider isn't. But yes, I used to go to this apple orchard as a kid and we'd get a ton of apples, cider, and cider donuts. I'll definitely try these though!

I just made my 2012 Bucket List and found this thread. So:
Vegan butter - done.
Tofu scramble with black salt - done.
Whipped topping with coconut milk.
Twinkies from Schmooedfood blog.
Seitan from scratch (going to add Vegemite this next attempt.)
Quinoa Rejuvelac cheese. the quinoa is fermenting and the cashews are soaking!
Marshmallows.
Agar jello. read somewhere that if you add starch, it becomes more delicate and bouncy, less rubbery/crunchy like my attempts have been.
Soy yogurt made with chili pepper stems. my previous attempts with acidophilus were miserable failures.
Various vegan pizzas I have in my head.
Homemade Daiya. I have an idea.
Homemade alternative to Veganaise.
bean and mushroom burgers.
angel food cake. Attempt #1, with soy protein isolate and agar, is in the oven baking right now.

id like to be less intimidated by V'con and try more things from it
there's a pizza recipe from VWAV im dying to try but it seems like it would take all day to make. it's either the Isa pizza or maybe it's called Goddess pizza i cant remember

Here was mine from last year (2012): *Poutine (hard time finding a gravy mix or recipe i like) *a really good vegan PHO *empanadas (I made tamales for the first time a couple of weeks ago, with hommade red chlli sauce and they were great!!) *Southern Syle Biscuts - for my baby. he is from NC and always asking. then use them for strawberry shortcake! *Tomato Sauce
I kinda spaced on this. I did make a really good PHO. The one from Vegan Eats World. It was excellent. No empanadas, but I did make some gyoza and they came out amazing. Fail on the tomato sauce.
So 2013: Empanadas (again)
Tomato sauce (never ending)
Potine (again). I actually DID find a really good brown gravy. I should make this tonight.
CHEESE from Artisian Vegan Cheese book. There are a ton I want to make. Partner is super sceptical. I want to prove him wrong. Hell, this could be my entire bucket list for the year.
Spring Rolls/Eggrolls. This should be easy, I found wrappers at Ranch 99.

corn tortillas injera ethiopian dishes kittee's mac and cheese dosas dosa fillings jam cheesecake that is not tofutti-based
and to step up my xgfx baking, instead of getting lazy and buying things at bakeries

This year I want to try to make one 'fancy' meal per week- like on Sunday nights, make something from my generally impractical cookbooks like Candle 79. I might even get really crazy and eat it at the dining table.

I need to try making tamales.
Everybody needs to make lasagna using the PPK blog butternut Alfredo sauce because it's the best thing in the entire known universe. (Vcon ricotta, spinach, extra roasted butternut; keep it simple)

love this thread! i've only been vegan since august 2012 so i'm excited to see lots of new things to try! if you haven't made isa's sunflower mac n' cheese, it is 100% worth the effort of messing up your kitchen. as someone who developed an adult allergy to all nuts, i looooove that this cheese sauce has no cashews in it! http://www.theppk.com/2012/02/sunflower-mac/i definitely want to get braver with vital wheat gluten and try my hand at making seitan or "meat"balls plan to make the english muffins and bagel recipes from Vegan Brunch and my goal is to not be intimated by Vegan Eat World, which I finally ordered and is on my way to me. I love Vegan Sandwiches Save the Day but I haven't made many things from it despite tons of dogearred pages, so I resolve to do that!

This thread has given me so many ideas!
I really want to master pie crust this year. It just never works for me. It's to the point where I'm scared of it.
I want to make a Moroccan bisteeya, and I want to finally make a big, Ethiopian feast.
Oh, and I would love to finally master an omelet. I've never been able to.

The trick is to use shortening and "massage" it into the flour so that its in pea sized balls. You want the little chunks becUse they'll melt and make the crust flaky. Make sure you use lots of flour when rolling out so it doesn't stick.

I use my food processor to mix pie crust and it comes out great. I've never been able to get it to work very well any other way.
