I make the gravy from Dreena Burton's Eat, Drink and be Vegan. Don't remember what it's called but I think there is only one gravy recipe in there. I love that gravy and make the patties so that I can have gravy!

My favorite way to serve them is with the Lemony Potatoes (also from Vcon), and when I take the potatoes out of the roasting dish I keep all the sauce in there, and I add a little flour and some broth, and whisk it up into a sauce. Sometimes I add a few capers. Then it is a lemony sauce/gravy that I LOOOVE on the cutlets.

and yeah, they are always super chewy for me too. I probably over-knead.

Is there a way to salvage these if they're really chewy and dry? Like slicing them up and making a stroganoff with them or otherwise using them like seitan?

Yup! I've baked them in a sauce before and they come out great! I usually use homemade cream of celery soup or cream of mushroom. Ladle some soup over the cutlets in a baking dish, bake about 20 min. They'll absorb some of the sauce and get tender and delicious! I did a mofo post about it. Here's the link, if you want the cream of celery recipe:

I cut up and cooked 2 cutlets in about 2/3 of a cup of OJ, soy sauce, rice vinegar and a bit of maple syrup and a 10oz bag of frozen broccoli and the cutlets ended up nice and soft and quite tasty once the OJ cooked down to a sauce.
