I make the gravy from Dreena Burton's Eat, Drink and be Vegan. Don't remember what it's called but I think there is only one gravy recipe in there. I love that gravy and make the patties so that I can have gravy!

My favorite way to serve them is with the Lemony Potatoes (also from Vcon), and when I take the potatoes out of the roasting dish I keep all the sauce in there, and I add a little flour and some broth, and whisk it up into a sauce. Sometimes I add a few capers. Then it is a lemony sauce/gravy that I LOOOVE on the cutlets.
and yeah, they are always super chewy for me too. I probably over-knead.
