Leftovers... AFR Eggplant chickpea curry over basmati, and after that a hot cup of chai.

A giant bowl of kale and broccoli with marinara (thank you Costco).

Stuffed peppers (red bell peppers stuffed with onions, mushrooms, more bell peppers, soy ground beef, rice, and marinara sauce). Oh, and some burnt sweet potato fries. Oops.

Some frozen Thai noodle thing from Trader Joe's. It was surprisingly good. The texture of the noodles wasn't the best, but I don't think it's possible to freeze noodles well. The sauce was delicious and pleasantly spicy and the veggies were an astonishing tender crisp!

bbq tempeh tacos!

Pizza! Mock chicken, asparagus, olives, cherry tomatoes and sun dried tomatoes. Swoon.

3 chickpea-spinach-peanut butter burgers/patties with brown rice, curry-coconut cabbage and an avocado.

AFR cabbage and seitan with mashed potatoes, peas and gravy.

green curry & brut marinated tofu, jasmine rice, noochy kale and maybe some roasted cauliflower

tofu tikka masala and rice, with some sort of vegetable on the side. I have taters, cauliflower, and peas.

Random potato-corn chowder that was in my freezer - plus treats from my holiday care package from kilgoretrout :)

More blender soup: this time with potato, carrot, tomato soup, and a tiny bit of curry powder.

Whole wheat linguini with steamed kale, reheated home made marinara, TJ's meatless balls, and TJ's vegan mozzarella shreds. It's not as good as Daiya, and it's not good strait out of the bag for just munching on, but I find their new vegan cheese edible enough in small doses on or mixed into things. Not a ringing endorsement, but I might buy it again in a pinch.

Spinach, Artichoke and Mozzarella Tofu Frittata

It was so good! Really did taste like artichoke spinach dip.

First time I ever pressed tofu. I didn't use black salt because who has that? I will after this next payday.

Mabelstone and I had tea leaf salad, tofu and eggplant burmese curry, and a burmese vegetable curry with puris and coconut rice with fried shallots. The tea leaf salad was the highlight! And she treated me. <3

I'm making red Thai tofu, green beans with Thai basil, and Bhutanese pineapple rice, all from AFR, tonight for supper!

Making ancho lentil tacos for my parents tonight, they love that stuff. Also homemade corn tortillas, cashew queso, pineapple salsa and avocado.

I'm going to try the seitan cheesesteaks from Quick & Easy Low Cal Vegan Comfort Food.

Penne alla vodka and steamed red kale with heaps of nooch.

Bed of romaine lettuce, radicchio, shredded carrots, and mustard greens, topped with black beans, tomato, red pepper, cucumber, and sliced VEW coriander seitan, with TJ's Goddess Dressing.

So lazy tonight. I had a chik'n patty on a wheat bun and a pumpkin waffle with peanut butter.

I had an offensively shitty hummus plate at the PDX airport (it's PDX! what the fizzle!) and a large beer.
