Made too many caulipots last week (doubled the recipe, haha), so making potato soup, beer bread, and salad tonight. Chili and tacos are also on the menu this week.

I made an herbed-up version of the Candle 79 wheatball dough last night that I'll bake for spaghetti & meatballs later...assuming I make marinara and get spaghetti, of course.

quinoa/red lentil combination with black beans, plantains, frozen spinach, frozen peas & a bit of onion over it, a pineapple/mango/coconut sauce mixed in. Surprisingly delicious (mostly because of the sauce out of a bottle)

Bok choy and shiitakes and a glass of wine. I felt like I was overfull and ate too much for most of the day, so I'm keeping it light tonight.

I want to eat at pywacket's tonight! Food here was pretty good though. We had: VEW "nutty seedy dippy stuff" (dukka) with veggie sticks and pita for dipping and then Egyptian fava beans with preserved lemons and parsley and green tahini sauce.

I had teriyaki bok choy and potatoes. It was super boring but I was exhausted after dance class and my soy curls are all crumbled.

Oh and tonight's dinner was quinoa salad tossed with edamame, corn & peas alongside a potato salad with a mustard, oil, red wine vinegar & herb dressing.

jojo wrote: vijita wrote: I might make another batch of Amey's spinach dal because it was SO. DAMN. GOOD. http://veganeatsandtreats.blogspot.com/ ... palak.htmlI really want to try this recipe, it looks great. I wonder if it'd work with frozen spinach? And if so how much? I have a tiny food budget this month & a whole load of lentils & frozen spinach! I think it would totally work. I would just add what you estimate might be that amount of spinach fresh...and air on the side of more since frozen spinach is packed down but also watery. Tonight I'm making jerk soy curls with rice and black beans. It's my boss' recipe that she veganized for me and it uses the rum cider we make. I'm feeling very run down and cold so this should do the trick to perk me up.

The most amazing cheese sauce spaghetti dish I've had in over three years.
It was sauteed onion and garlic with a pinch of smoked paprika and nutmeg with 1/4 of my batch of brie (From the AVC recipe.) melted in, some margarine and some plain soymilk, tossed with peas, steamed broccoli and spaghetti, salt and pepper.
Inhaled the whole plate in a ridiculously short time. YUM!
